BOXBOX Moves to Cherry Creek
Denver Fast-Casual Restaurant Signs Lease at 3003 East 3rd Avenue, Plans Early 2027 Opening
DENVER, Colorado – BOXBOX, the Denver fast-casual restaurant known for bold, composed salads and signature bento boxes, has signed a lease for its next home at 3003 East 3rd Avenue, Suite B, in Cherry Creek. After a year on East Colfax Avenue, the 1,290-square-foot restaurant will seat 12 and is planned to open in early 2027 with an expanded menu.
BOXBOX was founded by Denver husband-and-wife team Tim and Laurie Martin, who met while earning Hospitality graduate degrees at Cornell University. Tim has spent his career in restaurants. He has cooked in Telluride, Hanoi and New York City, advised premier hospitality, restaurant, and casino brands with Blau & Associates and most recently served as Senior Director of Food & Beverage Strategy at Vail Resorts. Laurie's career spans hotel operations, hospitality marketing and luxury travel, including marketing and events for José Andrés restaurants in Las Vegas and brand and partnership programs at Inspirato.

The expanded menu gives guests more ways to customize a full meal at BOXBOX. Salads remain at the center. Chicken, seasonal vegetables, pastas and grains are marinated, roasted, cured and layered over days so flavors develop and textures contrast. The menu offers a wide selection of naturally gluten-free items and about a quarter of the offerings are vegan-friendly. BOXBOX avoids upcharges, added fees and tipping, so the price on the menu is the price guests pay. More details on the expanded menu to be shared as opening approaches.
